DEGRADATION OF MARKERS AND FOOD QUALITY

Abstract. Mathematical modeling is widely used in food industry for designing technologies and technological processes. In recent years, the mathematical apparatus has been applied for in-depth description of food product composition and properties, and quality assessment, which corresponds to the trend defined in section III of the Strategy 2030. Predictive laboratory models provided an opportunity to begin expanding the functional relationships between product parameters and various influencing factors in solving practical tasks, in particular, shelf life forecasting.

Keywords: food quality marker, sources of degradation of markers, mathematical model, shelf life.

THE ALGORITHM OF CONTROL MEASURES CATEGORIZATION ACCORDING TO ISO 22000 REQUIREMENTS

Abstract. ISO 22000 is the first standardized model of food safety management system, which involves dividing all methods of managing significant hazards into two categories. In this standard, in addition to the critical control points (CCP), which are traditional for HACCP-based systems, the concept of “operational prerequisite programme” appears.

Keywords: ISO 22000, of control measures categorization, critical control point, operating prerequisite programme, decision tree.

ENVIRONMENTAL SAFETY ISSUES AT LARGE INDUSTRIAL ENTERPRISES

Abstract. The article analyzes the issues of ecological safety in the regions and environmental condition in the country as a whole due to industrial impact. A brief overview of the methods for solving the problems is provided. Existing programs aimed at combating atmosphere-polluting emissions are considered. The effectiveness of available ways to achieve environmental sustainability is evaluated.

Keywords: ecology, environment, environmental safety, industry, waste.

AUTOMATION OF COUNTERFEIT PRODUCT MANAGEMENT IN AQM SYSTEM

Abstract. Issues of counterfeit product management are the responsibility of quality departments, as they significantly affect product properties, company reputation and can lead to serious legal consequences. For enterprises producing high-quality goods, the work with counterfeit goods begins from the moment of designing new products and is supported throughout the whole life cycle.

Keywords: quality management, counterfeit products, digitalization of production, automated quality management system, AQM system.

ADAPTATION OF SENSORY ASSESSMENT METHODS TO COGNITIVE TECHNOLOGIES IN MARKETING

Abstract. Testing centers and laboratories traditionally apply organoleptic analysis to determine the product quality. Today, cognitive sensorics becomes a subject for research. It combines classical methods for sensory analysis of qualitative characteristics of goods and tools for influencing consumer choice using neuroscience.

Keywords: organoleptic analysis, sensory analysis, product quality, cognitive technologies.

ALGORITHMIZATION FOR THE PROCESS OF CONTROLLING GEAR GEOMETRIC PARAMETERS WITH CMM

Abstract. The paper considers the technique for measuring gear parameters on universal coordinate measuring machines (CMM) with ±0.003 mm accuracy. Recommendations on using point control method, forming arrays of controlled points for tooth lateral surface, and selecting the number of controlled teeth are offered. On the basis of the coordinates calculated for controlled points, a method of forming a control programme on CMM with further conversion of the obtained arrays of measurement results into a form suitable for further processing is presented.

Keywords: gears, measurements, coordinate measuring machine, CMM, coordinate system, control levels, points, coordinates, software package.
