The article provides a comparative analysis of standards governing chocolate quality requirements and examines the key provisions that have changed as regulatory legal acts have been updated. Based on these documents, a classification of chocolate produced by domestic industry enterprises was developed. The classification features regulated by the standards were defined, that form the basis for its division into types. The product offering for the “chocolate” group, formed under the influence of regulatory requirement transformations, was analyzed. Mentoring in metrology should be considered as a strategic tool for preserving and reproducing professional expertise, much of which is tacit and cannot be fully formalized. Based on the analysis of international standards and Russian legislation, the article substantiates the need to move from formal mentoring to substantive transfer of tacit knowledge.
